Guest loses connection with host's hard disk (shared folder)

I'm running Windows 7 x64 guest on Mac OS X 10.6.4 host. I have a shared folder - the Documents folder on my Mac. When I open documents in Windows and try a Save As, the window that pops up can't open up in the same location as where my document is, it just goes to the default c:\ folder in Windows. I need to then go click on my shared folder again and then navigate to the folder I want again. I have to do this every time I try to do a Save As or try to open another file - this is with Office programs like Word, Excel, etc. which by default will try to go to the same folder as the file that's open. I've been able to reproduce the issue on non-Office programs as well.
