For example, if we ping a server which we usually get 20-30ms on from any other machine, the !VirtualBox will get 20-30ms responses for the first three pings, then 500ms+ for the next 3, and then back to 20-30ms.

I've tried changing the device manufacturer but it didn't seem to work.

Changing it to a bridged network worked, however, we then experienced problems with our network outside of the !VirtualBox.
